Cooking With Stix
You’ve heard of ‘cooking with gas’, well now there is ‘Cooking with Stix’
‘Cooking with Stix’, provides groups with an opportunity to cook alongside Stix Head Chef, David ‘Stix’ Allison. Stix will share his cooking expertise with you and your class members while you prepare a wide variety of culinary delights, using the freshest seasonal produce straight from the Markets.
As Guests enjoy a glass of wine, and some of our award winning Canapes, Stix will talk you through some of the magic you will use to create a delicious three course meal.
Guests are then asked to don aprons, get their hands dirty, and become ‘Chef’ and under the watchful eye and guidance of the Stix Chef’s create dinner.
Dishes complete, and full of inspiration, all are invited to sit down and enjoy their well deserved meal.
Cooking with Stix covers an array of cuisine flavors and styles of cooking, using the freshest seasonal produce. It will appeal to all levels of cooking ability.
With the phenomenal success of ‘Cooking with Stix’, classes are fully booked for the remainder of 2006, however, 2007 classes commence in February.
These sessions are an ideal basis for a corporate function, team bonding, friends and family gatherings, or just a great way to improve your culinary skill and knowledge.
Chef’s Table

Our Chef’s table, takes a finely set table of silver cutlery, Riedel glassware, white china and starched napkins into the heart of our kitchen. Guests can enjoy the unique experience of seeing their tailored degustation menu, made before your eyes. This is a fascinating experience, and one you and your guests are guaranteed not to forget.
The preparation, cooking and construction of each dish is sure to provide an added and intriguing dimension to your lunch or dinner, with the end result being an unforgettable experience.

Cleo Swimsuit Issue Party "Bikinis & Martinis" - October
The beautiful harbour front garden and pool of "Altona", Point Piper was the backdrop for the launch of the Cleo Swimsuit issue. Pink martinis and mini club sandwiches were served while guests were entertained by exotic looking bikini clad dancers who arrived by speedboat. Jade McRae and Ricki Lee-Coulter belted out songs while guests were encouraged to play Twister and lawn croquet with bather clad male models. Sizzling summer fun was had by all.

Macquarie Bank 2005 Gala Ball - October
Stix Catering travelled to the Namoi Cotton Gin Gin in Central West NSW, to cater a gala ball held in an outback shed converted to a ballroom and hosted by the Macquarie Matrons. Guests enjoyed a gastronomic 3 course dinner using local produce and served by volunteer students from the regions high schools. One of the evening's many highlights was the guest interactive entertainment provided by Drum Café. Many a bongo was played over the course of the evening. Celebrities in attendance were Wendy Harmer, Tim Webster, Jason Hodges and for the ladies - several Cleo 2005 Bachelors. The evening raised $193,000 for cancer charity, CanAssist.

Young Presidents Organisation, Sydney Chapter
The spectacular and unique "Vault & Banking Chambers" was the venue of choice for the meeting of young business leaders of NSW's most influential corporations and organisations. The Education Chair of the Sydney Chapter, Mr Peter Holmes a Court (pictured below) and previously the CEO of AACO was in attendance. This was especially interesting for Stix Executive Chef - David Allison as he started his career as a jackaroo with AACO (Australian Agricultural Company) in 1989. He has come full circle with this event 16 years later - from chasing the beef from the back of the horse to serving it in filo pastry.

All Things French - Paul Bocuse & Louis Roederer
Executive Chef, David Allison took some time out to tour France in July to savour some of the "best" of France. David spent time in the Champagne region learning more about "bubbles". Famous champagne house, Louis Roederer provided a private chauffeur driven tour of the vineyards and operations in none other than a Rolls Royce. (How special did he feel - makes a change from the Stix delivery vans!). Moving on to Lyon, and dining on the traditional French fare of one of the most renowned French chefs, Paul Bocuse. If only we could all take a research tour like this.

Restaurant & Catering Awards For Excellence 2005-2006
Stix Catering were the "Winners" of two awards this year . "Corporate Caterer" of the Year 2005-2006 & " Caterer at An Event" of the Year 2005-2006. Our apprentice, Rebecca Hunter was also awarded "1st Year Apprentice" of the Year . As you can see much celebrating followed.

Shoot The Chef 2005
"The Last Resort". Again this year we entered the SMH's 2005 Shoot the Chef competition. The photo was a bit of fun, and thankfully Chef David Allison skills in the kitchen are superior to those portrayed in this photo.

Louis Roederer Champagne Dinner
February found us involved with a Louis Roederer Champagne Dinner in the beautiful setting of the Commonwealth Bank's heritage listed banking chamber at 48 Martin Place. Guests were spoilt with more than 5 vintages of Louis Roederer champagne, including Cristal & Cristal Rose as far back as 1985 combined with a 6 course gastronomic delight designed by Chef David Allison to specifically compliment each glass on offer.

Cleo Centrefold Reunion Party
The return of the male centerfold for Cleo magazine sparked a celebration at the North Bondi Surf Lifesaving Club with our tasty canapés "Aussie Barbie" style served by buff males in speedos and surf caps. Fun was had by all with entertainment provided by Guy Sebastian; and a DJ under the Hills Hoist.


Restaurant & Catering Awards 2004-2005
Stix Catering were judged in the industry awards held by Restaurant & Catering NSW - Awards for Excellence. We were the winner of the "Caterer At An Event" of the Year for 2004-2005 and finalist in the "Corporate Caterer" of the Year.

Shoot The Chef 2004
Photographer Simon Mossman captured (above) David in hot pursuit of a cow in a paddock in the Southern Highlands for the SMH's 2004 Shoot the Chef competition. The image was selected for exhibition as a finalist at the Art Gallery of NSW.
